You will Need
• 1/3 cup vegetable broth or one tablespoon olive oil, for sautéing
• One diced onion
• ¼ of a finely diced jalapeno
• Three cloves of minced garlic
• One diced bell pepper
• One diced zucchini
• One cup vegetable broth or water
• One cup cooked quinoa (or brown rice)
• Two 15 oz. cans of drained and rinsed black beans
• One 28 oz. Can of diced tomatoes
• One tablespoon of chilli powder
• Two teaspoons of cumin
• One teaspoon of paprika
• 1/3 teaspoon of cinnamon
• Salt, to taste
• Pepper, to taste
• Juice of half a lime
• Avocado, for topping
• Cilantro, for topping

In a large pot, heat vegetable broth/ oil on medium-high heat and then sauté onion, garlic and jalapeno for about three minutes. Add zucchini and black pepper. Sauté for again for about three to four minutes or until it becomes soft. Add in tomatoes, vegetable broth/ water, black beans, quinoa and the spice blend.
